It comes from Vienna (Wien) in Austria. It's a flat fillet of veal coated in breadcrumbs and shallow fried until golden in colour. It is said that in the mediaeval period the rich burghers of Vienna were fond of demonstrating their wealth by producing at table cooked dishes decorated with gold leaf. The golden breadcrumbs were a way of the less wealthy inhabitants also enjoying "golden" food.

Traditional Weiner Schnitzel are eaten without sauce, usually just a squeeze of fresh lemon, however some do, such as:-

Jäger-Schnitzel topped with a burgundy-mushroom or a creamy-mushroom sauce.

Rahm-Schnitzel topped in a pepper-cream sauce

Paprika-Schnitzel topped with a tomato-based sauce seasoned with paprika and red-peppers.
