Baleadas is a Honduran "sandwich" which is made with a wheat flour tortilla folded in half and filled with mashed fried beans and most commonly, cheese and cream.

For tortillas take:

3 cups of all purpose flour

2 tsp. baking powder

1 tsp salt

4-6 tbsp vegetable oil or lard.

1 1/4 cups of water

Mix dry ingredients then add the oil, mixing well. Slowly mix in water (this is tricky you have to get the dough to become smooth enough but not sticky, if it starts to stick to your hands add more flour). Knead dough for 2-3 minutes. After dough is smooth roll into small balls about the size of a Golf ball. Cover for about 15 minutes then roll out into a circle and place on a medium heat skillet.

Fill the tortillas with hot refried beans (or put some beans in the blender then heat) and add grated queso duro (a hard salty cheese) and mantequilla (much like sour cream). Scrambled egg, avocado and meat are popular additives.
