Bike sizing is more about how tall you are, and what reach you've got rather than what you weigh. 200 pounds isn't much to worry about. You might want to stay away from bikes that come with low spoke count wheels (24-28 or thereabouts) but apart from that you should be able to ride just about any bike.
The old truth was that you should have 1-2" clearance between your crotch and the top tube, but current designs often use sloping top tubes whch messes up the old reference. There are plenty of sites that'll give you some guidelines, do a search for "bike fitting" and see what you'll come up with. Try a couple of the different methods and them pick a comparison from the middle of the group. The most crucial value is that when you're in the saddle you should be able to have your leg almost fully extended when the pedal is at its lowest position.
I am 5'10" rider and I ride a medium bike that is to small for me (I dont have the money to buy a new one). but I got the bike when I was about 5'4" so a medium will be perfect. Though it does depend upon th company making it, geometry, and other variables, but for your height a medium (15.5"-18") would probably fit (a 15.5 might be a little small and an 18 might be kind of big so a 17.5, which is what I ride, would work best)
For a road bike, a 17" or 43cm frame is a good starting point to try for size. A medium 21" or 54cm frame is probably too large to fit you correctly. For a mountain bike, subtract 2" or 5cm from the size given for road bikes. Try the bikes out for size before you buy!
It depends more on the length of your legs than your overall height, but a 26" would probably be a pretty safe bet.

A downhill bike will be 35-50 lbs, depending on build. An all mountain or "big-hit" bike (not quite DH) will usually range from 30-40 lbs. A full suspension trail bike will range from 25-35 lbs. A full suspension XC race bike will range from 21-25 lbs. A race-level hardtail can be as light as 16 lbs, but most are around 20-23 lbs. This is current for new bikes, of "bike shop" quality, as of 2011. As time goes on and technology advances all of the numbers above will decrease.
