According to the folks at Contadina...Tomato products can be kept in the refrigerator for 2 to 3 days. Remove the balance of the product from the opened can and place it in a container equal in size to the amount of product. Seal tightly. This reduces the amount of air in contact with the tomato product. Air causes oxidation and the product will turn black. But a little olive oil will also keep the air out.
Tomato paste outside will probably be eaten by raccoons before it can spoil. Any portions of tomato paste that is not used within a couple of days could be divided into a ice cube tray and frozen for use at a later date.
The shelf life for an open can or bottle of tomato paste will be 5 to 7 days in the refrigerator. It will last up to 3 months if frozen.
You should keep foods out of the danger zone to prevent bacteria from forming on foods. Bacteria can form on foods in the danger zone after just an hour. The danger zone is under 145 degrees and over 45 degrees.
Unless you properly "preserve" it by properly heat canning it, you should store it in the fridge for up to a week. I would not put it in the cupboard!
