The brown substance that comes from the anus is correctly called feces or fecal matter. It is also called "stool" or "bowel movements" in medical literature. On a farm, this substance is known as manure. There are of course various rude or vulgar words for this substance.

Here is a briefing of the anatomy down there. The buttocks are what you sit on. The opening between the buttocks is known as the anus. The anus is the end of the rectum, and the rectum is the last section of the large intestine. When you eat food, it goes down the esophagus to the stomach. From there, it goes to the duodenum, where enzymes and secretions are mixed in. Then it goes to the small intestine where the nutrients are extracted to be used by the body. What is left continues to the large intestine, passes through the rectum, and leaves the body through the anus as fecal matter.
