Bows and Arrows were weapons developed to kill squishy targets made of flesh (like humans or the animals humans hunted for food or sport) and don't really have the necessary power to effectively pierce hard stone. For destroying the actual castle walls and other fortifications, Trebuchets and other siege technologies were employed (such as more generic catapults, or battering rams for attacking the castle gates). Then gunpowder came along and castles began losing their value as warfare fortifications.
