Technically, I think both "eat" and "catch" are both verbs. "Eat" is more standard (subject-verb-object) whereas catch feels like it's kind of hanging there.

You may want to restructure the sentence to something like this: "Birds catch insects and eat them."


But English is flexible enough to allow you to get away with the sentence you provide, even if it's a bit awkward.
