work = arbeid, week = uke "Arbeidsuke" is when students (at the age of about 14, I think) spend one week at a local workplace to try out how it is to have a normal job. The students are supposed to be treated as adults by their bosses. But they dont get paid for it.

Is there a law in the US that constitutes what mandates a workweek i.e. Monday thru Friday If the standard workweek has been Monday thru Friday can the workweek just be changed to Mon thru Sat?

No there is no such law. The FLSA describes a workweek as any consecutive 7-day period. This can be established as being ANY such 7-day period (e.g.: Sun thru Sat - Wed thru Tue - etc). Many persons, notably shift workers and public safety personnel work staggered weekly shifts their entire careers.
