Umeboshi = Ume (Japanese apricot/plum fruit) that has been pickled by salting and leaving in the sun and later is packed into some container.The umeboshi I have was mixed with shiso leaves also which add color and I guess some flavor. Umeboshi tastes pretty salty and sour. I think it's one of those things you really like or really dislike. They have a reputation for being good for your health.
