Because plants take up water with the minerals they require dissolved in them.
Many get it right from the ocean itself. Seawater is a rich "brew" of water, salt, minerals and many, many nutrients that a huge number of plants and tiny organisms take advantage of to live.
The rainwater contains minerals from the clouds, walls of rainwater tanks etc, thy just do. But water from a tap (unless bore water) Has no minerals in them and is clean and has no minerals.
