What is wrong in my jeep Cherokee when it stuck in traffic heat temperature goes up and coolant became empty so quickly?

First course of action would be to check for a coolant leak. When it's sitting in the driveway is there a puddle under it? If it's burning coolant there will be white soot in your tailpipe. Failing that I would check(replace for ~$15) the thermostat, it's the temperature sensitive valve that regulates coolant flow, it may be stuck closed.

jump power from the battery to the fan directly to see if the fan operates. if not, replace fan. interchange another relay with the fan relay to check the relay. there are usually the exact same relay located in the engine bay.

Engine coolant temperature sensor will cause that everytime... more likely than anything else because it only does it when stuck in traffic or stop sign to stop sign and not on open road.

"Normal" temperature is based on the thermostat, as least once the engine is warmed up. If the thermostat is working properly, the coolant temperature should stay around 195 degrees (F), but will vary by a few degrees, up or down. Also, if there is no air flowing through the radiator, as happens when you are stuck in traffic or stopped for a long period with the engine running, then you may see the temperature rise on the gauge, until the cooling fans turn on. I have the same bike, I've seen my temps climb as high as 230 on a 90-100* day in stop and go traffic. I changed the coolant and did a 65%_35% water to coolant ratio and have seen a 10 degree drop in temps. On highway on a nice stretch temps average about 170-190*. Good luck-try that mix should help some. Water cools better than coolant. Coolant is really designed to prevent freezing and rust in radiators not soo much to cool the engine better
