It is certainly not manslaughter. In manslaughter, the state would need to prove that your actions of discarding of the mushroom was "unreasonable" or "reckless" in some way. I do not believe that your actions would be found as unreasonable or reckless in any court of law.
Based on the situation that the man was homeless and he trespassed to get to the mushroom, I don't see much chance of you being held civilly liable, either.
