My 1998 E320 Wagon has 147,000 miles on it, I live in LA, CA and use straight 40 weight. There are also answers in your owner's manual. Motor oil is also graded with indications on the container.
Mercedes recommends that each of their vehicles use a certain synthetic oil. The ML350 is recommended to use 5w 30 synthetic oil only.

It is important if where you are living has a long winter or summer, but I always used Castrol Edge 10w60 Sinthetic.
Use Oil that meets MB 229.5 specifications. Mercedes recomends fully synthetic., my preference is Mobil 1 0W-40 European Car Formula fully synthetic. There is also castrol syntec 0w30 aka german castrol. mobil1 0w40 can be found at almost any autoparts store or walmart, whereas castrol syntec 0w30 can be found at autozone.
