Fats are made up of two different types of molecules - glycerol and fatty acids.
However, there are two main types of fat in foods - saturated and unsaturated.
The body needs fat to function properly - for hormones, to protect vital internal organs, for energy amongst other uses. Although too much fat, and especially of the wrong sort, can be detrimental to health, too little is also bad.
Saturated fat should be avoided if there is an alternative possible, and unsaturated fat is the 'healthier' fat, in that it does help to lower cholesterol (obviously not if eaten in excess, but as a 'substitute' for saturated fat).
There is a third type - trans fats. These have been manufactured and are even worse for our bodies because our bodies do not posess the enzymes to break trans fats down. These, although cheaper and easier to store, should not be consumed.
Most foods contain some fat, and sources such as oily fish provide omegas 3 and 6, which the body needs.
However, fats such as that under chicken skin or bacon rind aren't exactly essential to our health, and can be removed, with health benefits probably in mind :)
