Typically, your central thermostat sends a 24 volt signal to a terminal labelled "O", down a (usually orange-colored) wire to the reversing valve. This energizes the valve to switch over to cooling operation. For heat, the 24 volt signal is removed, and the valve defaults to the heating position.

There's quite multitude of things that impact a cooling performance. Specifically the height of the tower impacts on the the drafting air through the tower. See "Air Cooled Heat Exchangers and Cooling Towers" by Kroger for something more indepth.
The thermostat tells the air conditioner to pull in air. The air then goes through cooling lines in to the house. goes through the vents and out through the registers in the rooms of the house.

the reversing valve is what actually changes the refrigeration cycle from heat to cool. the reversing valve receives its signal from the thermostat.
An anticipator is a device in a thermostat which determines when to turn on or shut off the heating or cooling mechanism.
If you follow the top radiator hose from the radiator you will see where it connects to the engine cooling thermostat housing on top of the engine intake manifold . The engine cooling thermostat is under the thermostat housing
You have to manually select the heating, and cooling mode located on your thermostat.

The thermostat for the cooling system can be found on the front of the engine. You can follow the bottom radiator hose to the thermostat housing. The thermostat will be within the thermostat housing.
There is no AC "thermostat" If it is not cooling enough or properly there is something wrong with the system The thermostat for the GM automatic computer controlled Heat and AC system is behind a tiny little grill in the dash.
A cooling thermostat only will be normally open, closing on the rise of temperature. A Heat only thermostat will be a normally open, close on the fall of temperature.
