There are alot of different types of materials that are used to stop ballistic rounds fired from a handgun or shotgun. Most well know of the materials is Kevlar, which is a woven fabric that when layered is designed to literally "CATCH" the projectile and prevent it from penetrating the body. Although it is not designed to prevent "Stab attacks" it will stop a slash type attack.
Get a large shirt. Get some terracotta or ceramic tiles about 6 inches square and half an inch thick. Make some metal plates about the same area and maybe half as thick as the tiles. Sandwich them together alternately, 2 or 3 of each. Bind them tightly with packing tape. Make several of these blocks, and tape them together too, in a grid pattern. Put them on the shirt and secure them there.
That should help stop or slow anything with a small caliber or from decent range (pistols, .22, etc. that isn't point blank).
