The thickness and height of the clouds causes them to turn gray. Other clouds appear white because they are thinner and let light through.

this is to do with the clouds albedo (the amount of light they reflect) whiter clouds have more small particles whist dark clouds have less but bigger particles, this makes the white cloud more reflective as the particles have a bigger surface area
I think it turns gray because thr water that avaperates in the water is dirty so the cloud gets dirt and it turns gray

Clouds are only gray on bottom when they are ready to let go of all of the moisture and pollution in them. which means they are gray when it is going to rain.
