people turn pale as your body reacts and basically says that there is no water and your blood vessels and capillaries close to the suface constrict causing the colour from your blood to be taken away from the surface of the skin which means that because your bood doesnt contain as much water from dehydration you loose colour.

(also decreases flow to the viscera, but you can't see that. It therefore leaves more blood for the muscles.)
