In the tudor period few castles were built, save the costal defences built by Henry VIII. Typically these would be built out of stone, which for handiness would usually be the hardest type of stone that was closest to where you want to build the castle. However in some cases Caen stone was used because it is homogenous so suitable for carving. It would be shipped over from France and was a sort of 'high status' stone in Tudor England.
