-1 of your kidneys (providing the other has a good function)
-Thyroid (if you get thyroid replacement hormones)
-Testes/Ovaries
-Thymus
-Spleen (provided you get certain vaccinations)

Effectively, all of them. You do need your brain, at least one lung, one kidney, and all of your other organs because many of them are needed for things like metabolism and waste disposal (eg stomach, bladder, thyroid). The Pancreas is one organ you can live without, though.
