Fermentation produces histamine (as well as bacterial decomposition or 'aging' of food, e.g. meat & cheese) and the extent to which a beer is fermented determines it's histamine content. So high alcohol beer that has to ferment more (to produce the higher alcohol content) has relatively higher histamine than light beer & most lagers. Also, draft beer can contain higher levels of histamine especially if allowed to sit because bacterial decomposition begins to take place (draft is not pasteurized).
