what is so important about a thankful letter is that sometimes when you thank some one for something it makes them feel good. when you write you write your thank you letter you should mean it not just write it!! I just googled that same question and there were very few pages that addressed it. But the one I liked the most and which I just used when I sent a thank you letter was: "Thank You - [Reference position]". (No quotes in the subject line) I think you should write "Thank you" then briefly specify for the position for which you are interviewing.
