Depends mostly on the airline and where you're going in Hawaii If you're going Delta... many times they will route you through Atlanta for their non-stop flight to Honolulu. If you're going Continental to Honolulu, you could catch their nonstop out of Houston. Generally most flights depart non stop out of Los Angeles or San Francisco on most airlines... but like those mentioned above, it really depends on where you're going. Hawaiian Airlines had Vegas service... not sure if they still do. Northwest had service out of Minneapolis and I believe there might be a non stop out of Chicago to Maui (ogg)
Depending on the airline and it's route structure, one can fly over several sets of states. For example, if one travels from Minnesota to Hawaii by way of Los Angeles, then in a line on a map from each of the points would cross those states. Then from Los Angeles to Hawaii in one flight.
Seeing as Texas and Louisiana are both US States, no you do need a passport to fly between them.

The only way to get into Hawaii (or at least the most popular and most reasonable) is by plane. Most planes fly from the "mainland" of the united states (the U.S. minus Hawaii/Alaska) to Honolulu (the capital of Hawaii) airport.
China Air currently flies to most major airports through the United States, including New York, Los Angles, Chicago and Boston. Other destinations include Philadelphia, Baltimore, Hawaii, and Houston.
