It is often served with seafood which may be uncooked, but raw fish is called 'sashimi' Sushi rolls (make) can be filled with anything you like. Really. The little sushi blocks (nigiri) can be topped with anything. A butterfly'd cooked shrimp or a slice of smoked salmon are both popular. California rolls are 'make' made with avocado, cucumber and imitation crabmeat. I quite like smoked salmon and chargrilled red pepper. Also tuna marinated in soy, ginger, lime juice for a half hour, combined with spring onions is tasty. Go crazy, try anything! Try fusions: "Chinese style" duck with hoi sin sauce, spring onions and cucumber is good as is melon and prosciutto (Italian cured ham). I hope I have inspired you to try some out!
