Each time a monomer is hooked on to a connecting chain it loses a water molecule. This is the same reaction that occurs when a polymer is being produced. In order to build a polymer you must lose a water molecule. Cells need to break down polymers to get energy and to build new polymers. Cells break bonds between monomers by adding water to them the reverse of dehydration breaks down polymers. To build a polymer the water molecule has to be removed.
