While they will appreciate your sentiment, their pain is just too deep for your words to make a difference at this time. So, don't go overboard trying to write something amazing and end up sticking your foot in your mouth. Just keep it simple. "I'm so sorry for your loss" is a good way to say it. If you know that they are God-fearing people, you can add in something like, "I'll pray for you and your family during this difficult time."
The worst thing you can do is try to say ALL THE THINGS on the card. Usually, this just leads to you saying something offensive, even if that's not what you meant.
