The best cheese to use on nachos would depend on what type of cheese one likes. Most restaurant nachos are served with a Velvita type of cheese. Should one like their nachos a bit spicier one could try a Habanero cheese but mild cheddar or Monteray Jack would be a good option.

Swiss Cheese? Sometimes if you use the kraft singles or something like that they might not have holes, because it's more processed and they add extra things and might remold it, but just swiss cheese has holes.
There is no particular type, but it will depend on the size of the cheese. A large cheese may require a cheese wheel, whereas blocks you buy at the store should be easily sliced with a regular kitchen cheese slicer. One that shaves is better than the roller kind.

I used a metal ramekin (you could use glass too) and put the mozzarella cheese inside. Then fill a sauce pan with a small amount of water and put the ramekin in the water (not enough water to make the ramekin float). Heat the water carefully (don't leave it unattended) until the cheese melts. Try to stir the cheese while heating, but be careful not to let the steam or metal burn you. I used a chop stick. :) Worked great and I poured it on chicken enchiladas!
