The type of fat found primarily found in animal products is saturated fat. This is reference to the fact that acid chains which are "fatty" in nature have no possible double bond located in them.

A fat is unsaturated when there is at least one double bond between carbons in the fatty acid chains, and it is polyunsaturated when there are multiple double bonds. The hydrocarbon chains of polyunsaturated fats bend at the places where there are double bonds and this causes them to have low melting points - the fat molecules do not align close together.

This type of lipid is referred to as an unsaturated lipid, ( or fat). Lipids are long chains of carbon carbon bonds. When a double bond forms they are not able to pack together as closely due to a kink in the structure.
Sun flower oil is an unsaturated fat, basically a glycerol head and long chains of carbon hydrogen bonds. So, definitely covalent.

B6 is water soluble not fat soluble. if you would look at a Lewis structure for it, you would find that it has multiple hydrogen bonds (OH) which makes it a water soluble. a fat soluble would be a non polar molecule containing hydrocarbon chains (CH3)

The process called "hydrogenation" adds chemical bonds within the oil to decrease the number of double carbon bonds, changing the fat from unsaturated (fewer hydrogen bonds) to saturated (more hydrogen bonds).Saturated fats tend to be solids.
If a fatty acid has a completely single-bonded carbon chain with as many hydrogen atoms as possible bound to the chain, it is refered to as a "saturated" fat. It is literally saturated with hydrogen atoms. If the chain has one or more double bonds, those double bonds reduce the number of hydrogen atoms, and so that is an "unsaturated" fat.
