Colombia's food is a blend of European and African influences. Grilled beef, grilled chicken, pigs feet, leg of lamb, blood sausage, pita/flatbread, beans, rice, ribs, fried cow intestines, potatoes, yams, cassava, corn, plantains, garlic, onions, green onions, peppers, tomatoes, beans, lentils, peas, as well as fresh fruits. Ajiaco is a traditional soup made from chicken, avocado, corn, and potatoes. Coconut rice is quite popular, as well. Along the Caribbean coastline, pork and whale liver is used to make a spicy dish. Suero (which is like sour cream) is widely used throughout Columbia. Tolimenses are tamales made from corn, potatoes, peas, carrots, rice, chicken, and pork. They are considered a delicacy. Sancocho is another type of soup that was developed along the northern coast, but widely eaten throughout the country. It contains corn, potato, yuca, and plantain, as well as regional spices.
