it is a bacteria called Lactobacillus. It secretes lactic acid that slowly converts the milk to curd which is a bit sour due to presence of lactic acid

You can't. To make yogurt, you start with fresh milk and inoculate it with the bacteria that makes yogurt. The spoiled milk will contain competing bacteria and acidity that would not permit proper production of yogurt.
