Shark fins have very little flavor of their own and simply pick up the flavor of the other ingredients. A fairly wide variety of sharks (and other sharklike creatures, like sawfishes and shovelnose rays) are used. A dozen or so species lead the list of "preferred" fins, including tiger, mako, and sawfish.

However, in a sense, many of the "best" species are actually the "worst" in conservation terms. The practice of "shark finning" has resulted in a significant decline in the population of some sharks. Tiger sharks, for example, are currently ranked as "near threatened," and sawfish are critically endangered (that's one step above "extinct in the wild").
