You can use most versions of MS Word and MS Excel with Windows Vista. The versions mostly associated with Vista are MS Word 2007 and MS Excel 2007.
It depends if the Word and Excel are OEM copies (ie the software was installed on the machine by the suppliers), then the license usually prohibits transferring to other machines as the software is only licensed for the original machine. If they are "regular" copies, then you will need the original CDs. You should be able to de-install the XP versions and install the software from the CDs.
It depends. There is no direct relationship between Windows and Excel versions. If you have Windows XP, you probably use Excel 2003. If you have Windows 7, you probably use Excel 2007 or Excel 2010. Excel 2007 and later can read Excel 2003 files, but Excel 2003 cannot read Excel 2007 files, unless you save the files in "compatibility mode." Excel 2007 and later contain some features not available with Excel 2003 and earlier. If you need to use the same worksheets with several versions, then save your files in compatibility mode with the newer versions.

You use the Freeze Panes option. When you do it, columns to the left of the active cell and rows above the active cell will be frozen. So if you wanted to freeze just the first column, you would make B1 the active cell before freezing the panes. To freeze just the first row, you would make A2 the active cell before freezing the panes. To freeze both the first column and first row, the you would make cell B2 the active cell before freezing the panes.

Both applications existed before the first versions of Windows. A version of Excel for an early version of Windows came out in 1987 and for Word in 1989. These were not Windows operating systems, the first of which was Windows 95, but interfaces on your computer that consisted of visual windows that still are seen in the modern versions. Excel and Word and the other Office applications do not come automatically with Windows. You have to specifically order them as they are not part of Windows.
There is a lot to learn about Excel 2010. If you have never used any version of Excel, then a good course about it or even a good book will help. If you have used older versions of Excel, then you would not have much problem learning to use Excel 2010.
