The 'Mcguffin' is a plot device used in suspense or thriller movies. It is most famously used by Alfred Hitchcock. It is something in the movie that drives the plot, motivates the characters and focuses the attention of the audience ( Hitchcock uses it to distract and lead astray their expectations) , but has no actual impact on the overall plot. An example of a Mcguffin would be the money that Marion Crane steals in the film 'Psycho'; we spend the first part of the movie watching her steal the money and make her escape with it but by the time she reaches the Bates Motel the money has become irrelevant.
It was probably the director's choice. It added to the somber tone of the film. Disagree. Casablance was a B movie, and the cheaper B movies of that time were always in black & white to save money. Only the big and expensive movies like Gone With the Wind and The Wizard of Oz were in color.
