Lesbian culture really developed in the 80s and 90s. It was hip and sophisticated to eat fancy imported cheeses and other such haute couture in the 80s and 90s in a way that fell out of popular culture in the past couple of decades. Ergo, it's because lesbians live in 1995.

The stinkiest cheese, Époisses, is also the sweetest. The stink is really a matter of culture and education. It is not so much a stink as a wonderful aroma in anticipation of pleasure to come for connoisseurs. It is also satisfying to many to know that cheese is a natural product made only from raw milk, rennet, cheese culture and salt. Its aging process can take over a year and as such, cheese represents the opposition to the industrial "fast food" or "junk food". Cheese from pasteurized milk do not have this "stink", it may be a better option for you.
