When immigrants were leaving for America, they were happy and scared. Immigrants were scared because they left everything they knew and did not know what they were going to see in America. Immigrants were happy because they were going to a land of opportunity and a better life.

Those words are for the immigrants that left their homeland to make the United States of America their new home. It speaks to the fact that America is considered the "land of opportunity". To escape poverty in their own countries, many have immigrated to this one and they were welcomed.
Same reason as everyone else probably. The polish came to America for reasons like Some immigrants left to escape conscription, others left to seek better opportunities in America, and some fled from religious persecution.
German immigrants often left from ports such as Hamburg and Bremerhaven. These ports were major hubs for transatlantic travel to North America during the 19th and early 20th centuries.
It would be better to think of this as what languages are written left to right? English would include a number of countires; United States, Canada, England. French is written left to right. French speaking countries include France, Canada, Madagasgar (As well as numerous other African Countries). Spanish and Portuguese is written left to right. Countries included in this category are members of South America and Central America. German is written left to right.
