To destroy everything in the South. They had a policy of 'total war'--meaning, they weren't going to stop until they damaged or destroyed everything they could get to. It was to completely devastate the South, and make it the biggest loss they could get for them. The more that was destroyed, the more they were going to have to clean up after the war, and the harder it was going to be on the Southern states.
In its' day, it represented "Total War", just as the Atomic Bomb did in WWII.

My mom said they burned houses and people in them killing as much as every Pearson in rackdale and that was the end of the civil war
