Cream cheese is not like raw meat. It can actually be left out for several days without spoiling, although not necessarily recommended. It will go rancid or dry and crusty after over a week or so, but leaving it out a few hours or overnight is perfectly fine. When making a cheesecake, most chefs will leave it out overnight to let it soften completely. So when not using it, keep it refridgerated, but if it gets left out for a bit, don't panic!
