A basic substitution would be to use cream cheese instead. If you have a little time, a mixture of 1 tablespoon of cream mixed with every 8 ounces of softened cream cheese is better. he hardness of cheese tells you that the cheese is either becoming old or it was not sealed in its package right. Most the time when cheese gets hard it is because it was left out in the open and air dried it out.

Milk & slice / bulk cheese freezes well, sour cream doesn't. The first two are fine taste & consistency-wise, sour cream was way off on both bases. IMHO I wouldn't think ricotta / cottage cheese would freeze well bc of this. Looks like its time to make lasagna for you!
