what could cause a 2004 grand am to run hot? we have put new head gaskets on, water pump, thermostat, and cleaned the radiator.

You don't. One, it is illegal. Two, It would cause a exhaust leak that if it got inside the vehicle would be poisonous to the driver and passengers.
The exhaust pipe will turn red when the engine is running lean. You may have an EGR valve problem, vacuum leak or other problems that can cause the engine to run lean. A lean running engine can burn valves or pistons and causes other problems. Whatever the cause, it needs to be repaired before you put more miles on the engine, otherwise you'll ruin it, if you haven't already.
Sounds like your problem is probably a loose heat-sheild or a loose exhaust. Have it checked.

I do not believe that your exhaust system should in any way cause your toque to become loose. Driving with your windows open would be far more likely to loosen your toque.
Smell the oil, if smells like some gas is in it. then it would be ur fuel pressure regulator.
