What would cause the speedometer tachometer and cruise control to stop working on a 2000 Nissan Crew Cab SE after driving a couple of hours?

One of your vacuum lines has come loose or is broken. Check all the lines and repair the broken line or replace it back on the nipple that it came off of.

how exactly did you diagnose your SPEEDOMETER working in neutral. is it because your not moving and it read 0mph? now your TACHOMETER which typically goes from 1-10 (x1000) if that's doesnt move in gear that's just fu**ing weird

There are several possibilities why the speedometer is not working. The VSS, vehicle speed sensor may have failed or become unplugged. The speedometer may have failed, or the ECM, engine control module, may have failed or there could also be wiring issues.

Since you replaced the sensor, and the speedometer still isn't working it is possible that you will need to replace the speedometer cable. Check the cable first to be sure that it is still properly connected, and if so replace the cable to see if that solves the problem.
