A government branch cannot take over due to the system of checks and balances. There is a separation of powers so the government cannot turn into an authoritarian one, meaning no one person or group can take control of the government.

How does parliament ensure that the government doesn't do exactly as it likes?

Most governments have a system of checks and balances so that doesn't happen. For example, in the United States government, our Executive Branch (the President) is able to check our Judical Branch (our court system) by picking the court justices, but the judical branch is able to check the Executive branch by establishing judicial review. In retrospect, no one branch of the US government is any more powerful than the others. BUT I haven't studied European government so I'm not sure how it works over there, but it may be similar.

Why did the government proposed by the constitutional convention employ multiples checks on each branch?

Our system of Checks and Balances was set up in order to assure that no one branch of the government had more power than any other branch. The system of "Checks and Balances" is in our Constitution so that one branch of the government cannot take precedent over the others. It is there so the Executive Branch (president and cabinet) can't have power over the Judicial Branch (Supreme Court) or the Legislative Branch (Congress-House and Senate). It protects the American citizens from an take over of the government by one branch or another.
