battery will run down and die, may leak

First answer doesn't make sense.... All ac systems no matter what the model have blow off saftey valves either on the compressor and or on the manifold lines near the compressor. So if for some reason high side pressure exceeds the limit and jumps to over 400psi the valve will open venting the freon into the air it will do this until no freon is left in system. Good luck.

Why is a car cooling system usually pressurised?

Actually, it always is when operational. The pressure is what moves the refrigerant or coolant (depending on whether you're referring to the air conditioning or the engine cooling system) through the system. The pressure raises the boiling point of the coolant.

Through the schrader valve on the low pressure side of the system.

How is the refrigerant cylinder pressure kept above the system pressure when a system is being charged with the vapor from a cylinder?

Add refrigerant vapor on the low side of the system ,the compressor raises the pressure of the refrigerant on the high side of the system and lowers the pressure on the low side
