They could still be shown in fairs and kept as pets. They could also be made into dog food and other products. They could be used as coyote and fox bait. Heck why not shark bait if you're a fisher. Plus humans don't have to consume it. It's milk and cud is made into things like hand lotions and soaps.

Neither, except if you are referring to how it comes from a cow and is the source where many other dairy products are made, in which case it would be "producing." Logically, A cow produces milk, and it is consumed by the calf or by humans.

Do dairy products imply that the young calves are to be slaughter so their mothers milk can then be kept for humans consuming instead?

The purpose of dairy products is to ensure health in humans, not as a means to imply to others that calves need to be sacrificed so that we can drink the milk of cows. Not all young calves are slaughtered right after birth, by the way. Heifer calves are kept to grow up to be milk producers, but bull calves are either (yes, unfortunately) killed for veal or raised as steers (after being castrated) for beef.
