Whatare some good vegetarian pasta recipes?

Now, pastas themselves are usually vegetarian. Prepare as normal.

Sauces--marinara sauces are almost always vegetarian.

Pesto sauce--

1.5 cups of fresh basil leaves

1/2 cup of olive oil

1/2 cup of grated Parmesan cheese (check ingredients to make sure it has no animal rennet--unfortunately most gourmet imported Parmesan cheeses do. Kraft is vegetarian)

3 Tablespoons of toasted pine nuts (heat nuts in a pan over medium heat--watch carefully, the difference between raw and burned nuts are a split second!!)

2 cloves of garlic

1 teaspoon of salt (optional)

In a food processor (wands work best), crush the basil leaves with the optional salt and half of the olive oil. Add the rest of the olive oil with the pine nuts, 3/4 of the cheese, and the garlic.

Sprinkle the rest of the cheese on individual servings.

An even easier recipe--

most pasta will taste good with olive oil, garlic, sauteed vegies, and grated Parmesan cheese on top. If you can't eat garlic, saute some asafetida (found in Asian food markets) in olive oil. If you don't eat cheese, try nutritional yeast.

Don't forget protein!! If you don't eat cheese, simmer TVP or beans in your marinara. Stick to whole grain pasta, if you can.

Boil pasta, throw some chopped and steamed vegetables on top and drizzle with soy sause.
