You can, but it's a good idea to know what it is in there for before you simply leave it out. If it is a required flavor, there aren't a lot of substitutions (non-alcoholic at least) that really work to capture the expected flavor.

If however, it is used as a "water like substance", feel free to substitute any other "water like substance". Be aware that the final flavor will be very different, but that shouldn't make it any more difficult to work with. Just remember to take into account any further cooking technique being used upon the dish. For instance, if it is involved in a reduction, any sweet or salty liquids will have a very dramatic effect.

Another thing alcohol based liquids are used for is extracting flavor, and this is the one time you don't want to leave it out. Tomatoes, cucumber, and vanilla benefit greatly when alcohol is used in their preparation. You can leave it out, but the final product will be very different.
