as far as i know a mason jar is a jar that is typically used for canning certin foods and liguids. The jars usually have the lid that is two pieces and the top has a rubber linner inside and the other part is threaded to screw on.

There are several purposes of the lid and rim on home canning jars. The 2-piece closure allows air to escape from the jar during processing. The air is pushed out of the jar by steam building up in the jar during the hot water bath method and from pressure in a pressure canner. During the canning process the air escapes under the lid. This is supposed to happen. If improper headspace is left in the jar it can cause liquid to escape from the jar when the air is vented. Check your recipes closely for headspace and measure each jar when filling.

Sometimes you boil the lids and sometimes you don't. If you are canning with either a hot water bath or in a pressure cooker, you do not need to boil the lids. If you are canning something that is put into the jar hot and is not going to be processed in the the bath or pressure cooker, you boil the lid to soften the rubber in the lid that forms the seal.
The only real "Ideal" canning jar that's worth $$$ is the "Ball Ideal, Blue, 1/2 pt, at $28.. But 99% of the time, you can base the others off that price by taking $3-5. ofdepending on what shape its in and size plus color.

1. If the jar had been previously open, the inside of the lid or the screw area of the jar may have gotten moist from the material in the jar. Putting the jar back in the refrigerator will cool the material on the lid making it less viscose (thicker) and possibly stickier making it harder to separate the lid from the jar. 2. Putting a jar in the refrigerator will make it colder. Because of the physical properties of metal and glass or plastic, the cold will make the metal lid contract/shrink more than the rest of the jar. Although the degree of shrinkage is very small, it could be enought to tighten the lid around the jar making it harder to remove the lid.
