After setting sail, the ship never touches land, although Ishmael does describe some of his experiences off the baot.

Well considering the book was written in 1851 and the time machine was not yet invented, it would be very hard to write a book that takes place in the 1880s or 1910.
I'd say it would take place in the 1830s/1840s, the height of whaling.
The events in Moby Dick take place mainly on the whaling ship Pequod, on the open sea in the Pacific Ocean. The novel follows the crew's journey as they hunt the great white whale, Moby Dick.
