In an car with an automatic transmission, you should be fine not using the parking brake. In one with a manual transmission, leaving the car in gear should suffice, but it can be hard on the transmission to do so. If you are facing downhill, leave the car in reverse. Alternately, if you are facing uphill, leave the car in any one of the forward gears (1st through 3rd-6th depending on what you top gear is).
Vehicles should always be left in neutral when parked.

When parking uphill with a curb, turn your wheels away from the curb and set the parking brake. When parking uphill without a curb, turn your wheels towards the edge of the road or shoulder and use the parking brake. When parking downhill with a curb, turn your wheels towards the curb and use the parking brake. With just about any automatic transmission if you park on a slope and don't set the parking brake, the car rolls downhill a little bit until the transmission locks and it can't roll any farther. This can cause the car to get stuck in park. You might have to get another car to push you slightly uphill to disengage the parking pawl within the transmission (just a couple of inches, no more.) Whenever parking on a slope you should set the parking brake first, then put the car in park.
