Pineapples should be added towards the end. Watch the ham cook. When there are about 15 minutes left, slice up your pineapple. Then add them to the ham.

If you are using fresh pineapple, it is important not to add the slices to the ham too early. Fresh pineapple contains an enzyme that will cause the ham to turn mushy.

Better yet, use canned pineapple, the canning process destroys the enzyme.

Also, do not store the leftover ham with the pineapple slices.
