No, with the main shut off, no water can be taken from the heater so it will just sit there. <<

If the flame is left on and not set to pilot or shut off it can be Very dangerous....

Unlike a boiler that has operating controllers and safety devices such as a low water cut off a residential heater has only an operating controller (aqua-stat ) and the only protection is the T&P which is a last resort.

Suppose the water heater is above any tap and the tap is opened, the tank will drain water and now you have an air pocket that can cause a very violent explosion when the heater fires and compresses the air.

Unlike a steam boiler which has a Hartford loop to help protect against dry firing a water heater has no such protection and if a valve is open or a pipe leaks water WILL BE TAKEN FROM THE HEATER

If the pilot light goes out on your hot water heater is it dangerous or harmful?

No, it is not dangerous. (Unless you are working with a water heater that is 20+ years old.) In any modern hot water heater, if the pilot light goes out a fail-safe will go off - preventing gas from leaking out. Also, there is a sensor so if there is not enough air-flow or oxygen with the water heater, it will shut off the gas.
